Honey, Oats & Apple Muffins

Yields 12 muffins
Ingredients
  • ¾ cup of milk
  • 1 egg
  • ¼ cup oil
  • ¼ cup clover honey crème
  • ½ cup chopped apple
  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • ⅓ cup wheat germ
  • ¼ cup firmly packed brown sugar
  • 1 tablespoon baking powder
  • ¾ teaspoon cinnamon
  • ¼ teaspoon salt
Instructions
  1. Preheat oven to 400° F (200°C).
  2. Spray muffin cups with nonstick cooking spray.
  3. In a large bowl, combine milk, eggs, oil and honey crème.
  4. In another bowl, mix together apple and dry ingredients. Add dry ingredients to wet ingredients until completely moistened (do not overmix!).
  5. Fill muffin cups ⅔ and bake 15 to 20 minutes.
  6. Serve warm with butter and additional honey crème.
