Honey Cake
- 2 loaf pans
- 2 cups honey
- 1 teaspoon baking soda
- 1 cup sugar
- 3 eggs
- 4 cups flour
- 1 teaspoon baking powder
- ½ cup oil
- ½ cup orange juice
- ½ cup seltzer
- Preheat oven to 350°F
- Lightly oil the loaf pans
- Blend honey with baking soda
- Add sugar and eggs
- Add flour and baking powder, oil, juice and seltzer
- Pour batter evenly ½ way up pans
- Bake 1 hour, cake is ready when an inserted toothpick (or raw piece of spaghetti!) comes out clean
Optional: sprinkle with nuts or cherries
