Honey Cake
 
Ingredients
  • 2 loaf pans
  • 2 cups honey
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 3 eggs
  • 4 cups flour
  • 1 teaspoon baking powder
  • ½ cup oil
  • ½ cup orange juice
  • ½ cup seltzer
Instructions
  1. Preheat oven to 350°F
  2. Lightly oil the loaf pans
  3. Blend honey with baking soda
  4. Add sugar and eggs
  5. Add flour and baking powder, oil, juice and seltzer
  6. Pour batter evenly ½ way up pans
  7. Bake 1 hour, cake is ready when an inserted toothpick (or raw piece of spaghetti!) comes out clean
Notes
Optional: sprinkle with nuts or cherries
