Apple Honey Chicken

apple-honeyThis gorgeous recipe is my Rosh Hashana signature dish. Full of apples dipped in honey, you can just hear it singing, "Have a Happy Sweet New Year"! KFB Tips: Instead of the oven, use a grill pan sprayed with oil spray on the stovetop and give the apples pretty grill marks. Prepare extra apples for snacking and garnishing desserts.
Apple Honey Chicken

Ingredients
  • 1 chicken cut into ¼s or ⅛s (preferable with skin so it doesn’t dry out)
  • 1 cup (up to 1½ cups if necessary) apple juice concentrate
  • ⅓ cup honey
  • 2 tablespoons fresh lemon juice
  • ¼ cup brown sugar
  • 2 teaspoon cinnamon
  • 3 large green apples, cored and cut into thick rings
Instructions
  1. In a small pot, combine apple juice concentrate, honey, lemon juice, brown sugar and cinnamon; mix well. Heat over medium flame until the sugar is dissolved, about 3 minutes. Set aside 1 cup of this mixture. The remaining sauce will be use for basting the apples.
  2. Place the cleaned chicken pieces in a baking pan. Pour the reserved 1 cup of sauce over the chicken, making sure to cover all the pieces well. Cover the pan and refrigerate it for a few hours or overnight.
  3. Preheat the oven to 350° F (180° C). Bake the chicken for 1½ hours, covered and then ½ hour uncovered. The chicken will get a beautiful mahogany color.
  4. To prepare the apples, arrange the apple slices on a baking pan covered with baking paper and sprayed with oil spray. Generously brush them with the basting sauce. Grill for approx 6-8 minutes on each side, basting often. Decorate the chicken pieces with apple slices when serving.
